This first batch is a joven ensemble composed of 70% espadin and 30% cuixe. The matured agaves are cooked in a pit oven, crushed with the tahona wheel, naturally fermented in wood tubs and double distilled in copper alembic.
The taste is spicy...mineral...green...fresh...earthy!
